Vegan . They’re not everyone’s idea of a good time. Mostly this is because, instead of embracing the differences inherent in a dairy and egg-free , vegan bakers attempt to replicate a traditional sponge to prove vegan are just like normal . And it doesn’t really work. A light, fluffy, butter and egg-free sponge is a mythical beast that is yet to be captured.

But if you accept that a vegan cake will be dense and close-textured, and you don’t make it with wholemeal flour (why would you do that to a cake? Do you hate joy?), then a moist, fudgy bake that tastes like the filling in a cherry bakewell tart can be yours. For the recipe, click here.

    @Greedy Diva Cherries make everything 100 times better, even vegan cake (and I think this is a nice vegan cake).

    @Miss Whiplash Vegan chocolate cake is next on my list of vegan cakes. And they do work a bit better if you stop thinking about sponges and play up to their strengths!
