Mini lemon almond

And so I am at home, ensconced in the bosom of my family, considering the merits of Quality Street over Roses and waiting for my sherry glass to be refilled. But there is still time for one last mince pie recipe, especially as it’s not one of mine so I don’t have to write it up.

A couple of years ago, I picked up a leaflet in Waitrose with a recipe for Mini mince pies with lemon icing. It’s the best sweet mince pie recipe I’ve ever tried and I make about 100 of them every year for our party. The pastry and icing goes really well with the Apple and lemon mincemeat I made in November. So if you’ve got a jar of mincemeat left and a party to host over the 12 days of Christmas, these mince pies are worth making.

In the meantime, have a wonderful Christmas, with juicy turkey, crisp roasties and not a sprout in sight.
